Mexican Hamburgers

A delicious, family-friendly comfort food under 400 calories!  What more could you ask for?!

Prep Time:  15 Minutes     Total Cook Time:  35 Minutes     

Serves 6-8

Ingredients

  • 2 lbs or 900 g ground beef (90% lean)
  • 1/2 cup ketchup
  • 1 Tbsp Worcestershire sace
  • 1 tsp freshly ground pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp chipotle seasoning, salt-free
  • 8 slices light cheddar or Swiss cheese (optional)
  • 8 multi-grain hamburger buns
  • 2 tomatoes
  • 1/2 red onion
  • 1/3 head leaf lettuce
  • 1 ripe avocado
  • 1/2 cup salsa
  • Ketchup, mayonnaise, salsa etc.

Directions

Preheat BBQ to medium (approx 350º F) by starting both burners on a med-low setting.

Mix together beef, ketchup, Worcestershire sauce and spices in a large bowl.  Form the mixture into 8 large patties, each about 3/4 inch thick.

Place patties on BBQ.  Close lid.  Cook each side 5-10 minutes or until center is well cooked (meat thermometer should read 170°F).  If you want cheeseburgers, place a slice of cheese on top of each hamburger for the last 3 minutes of cooking.  For the last 2-3 minutes of cooking toast the bun, cut side down on the grill.

Slice tomatoes and onion and rinse lettuce leaves.

To make quick guacamole – Mash the ripe avocado in a small bowl using a fork.  Stir in 1/4 cup salsa.

Serve hamburgers on the buns with your choice of fixings.
